DIANE'S FAVORITE MEATBALLS & SAUCE
Prep Time: 30 Minutes
Total Time: 1½ Hours
Servings: 80 Meatballs
Ingredients:
MEATBALLS: SAUCE:
3 Lbs. Hamburger 3 Cups of Katchup
1- 12 oz. Can of Evaporated Milk 1½ Cups of Brown Sugar
1 Cup Quick Oatmeal 1 tsp. of Garlic Powder
1 Cup crushed Town House crackers (I used Club Crackers) ½ Cup Chopped Onions ( I used 1 tsp. Onion Powder)
2 Eggs 1 tsp. Of Liquid Smoke
½ Cup onion (flakes optional) (I used 2 tsp. Onion Powder)
½ tsp Garlic Salt (I used Garlic Powder instead)
½ tsp Pepper
2 tsp Salt
2 tsp Chili Powder
Instructions -Mix all MEATBALL ingredients together and form into 80 balls. (I used my Pampered Chief cookie scoop, not the smallest one, and used 2-9x13 pans, placing 8 rows of 5 in each pan). Mix together SAUCE INGREDIENTS and spoon over meatballs. Bake at 350* for 1 hours. Can be put into a crock pot on warm to serve to a group. TAKE COPIES OF THIS RECIPE TO THE PARTY, IT'S A REAL CROWD PLEASER!
CROCK POT SHREDDED CHICKEN

Total Time: 6 Hours
Servings: 6 Large - 9 Average
Ingredients:
6 Frozen Boneless Skinless Chicken Breasts YOUR FAVORITE TOPPINGS MAY INCLUDE
1 16 Oz. Jar of your favorite Salsa Soft Tortilla Shells or Totilla Chips
Shredded Cheese, Sour Cream, Lettuce,
Olives, Peppers, Hot Sauce ... MAKE IT YOUR WAY!
Instructions - Put 1/4 Jar of Salsa into the bottom of the crock pot. Add all of the chicken breasts. Put the rest of the jar of salsa overtop. Cover and heat on high for 6 hours. Shred Chicken and put back into crock pot with salsa and blend. Serve on Tortilla Shells or in a bowl over Tortilla Chips with whatever toppings you like the most. This is a Great Dish to take to a Carry In ... And People won't believe how easy it is to make!
HEARTY & DELICIOUS POTATO CHEESE SOUP
Prep Time: 25 Minutes
Ingredients: 2 Medium Carrots, diced / 2 Potatoes, diced / 1 Cup Boiling Water / 1/2 Sm. Onion OR Onion Powder to equal the 1/2 small onion / 3 Tbs. Butter / 1/4 Cup Flour / 3 & 1/2 Cups Milk / 1/2 Block Velvetta cheese, diced
Instructions - Parboil Potatoes and Carrots for 10 minutes. Melt butter and add onion OR onion powder, stir well. Stir flour into 1/2 cup Milk and add to butter mixture. Whisk in the rest of the Milk. Add cup up Cheese, Potatoes & carrots (including water) Stir until melted. Garnish with onions and bacon bits if desired. SERVE with homemade bread.
Smooth texture and Fantastic for a cool Fall, Winter or Spring afternoon!
PJ KILGORE'S GLAZED PECANS
Prep Time: 5 Minutes
Makes: 1 Pound
Ingredients: 1 Lb. Pecan Halves / 1 Egg White / 1 Tbs. Water / 1 Cup White Sugar / 1 Tbs. Cinnamon / 1 Tsp. Salt
Instructions - Whip Egg Whites and water until Frothy. Mix in Pecans, stirring until coated well. Put dry ingredients into a 9x13 glass baking dish and mix together. Add Pecans and stir until coated well. Bake at 300* for 45 minutes, stirring well every 15 minutes to ensure they don't burn. Cool on paper towel. ENJOY! (My family loves them hot, but be careful if you try them this way, they can burn you).
KILGORE'S RT 35 BROWNIE CHEESECAKE
Prep Time: 20 Minutes
Servings: 12
Ingredients: 2 Brownie Mixes / 1/2 Cup Sugar / 2 Eggs / 2 Packages Cream Cheese (soft) / 1 Tsp Vanilla / 1 Cup Milk Chocolate Chips
Instructions - Fix brownie mix according to package directions for chewy brownies. Put brownie mixture into greased 9" springform pan. Bake at 350* for 23 minutes. remove from oven and cool for 10 minutes on a wire rack. Meanwhile, beat together: Sugar, 2 Eggs, Cream Cheese, and Vanilla. Pour this mixture over the 10 minute cooled brownies. Melt Chocolate (NO, more is NOT better) and drizzle on top, then swirl into the Cream Cheese mixture. Bake again for 35 more minutes. remove from oven and cool COMPLETELY! Run a butter knife around edge before removing from pan. Plate in it's entirety or slice and serve. DELICIOUS!
DIANE'S SPICY BLACK-EYED PEAS
Prep Time: 20 Minutes
Servings: 12
Ingredients: 4 Cans of Black-Eyed Peas / 1 Lb. Bacon, cooked & chopped PLUS the Drippings / 2 Large Onions / 28 Ozs. of Crushed or Diced Tomatoes / 4 Tsp. Garlic Powder / 4 Tsp. Chili Powder / 2 Tsp. Salt
Instructions - Add Everything together in a 5 quart saucepan and bring to a boil. Cover, reduce heat and cook on low about 1 hour.
