Diane's Favorite Meatballs & Sauce
Prep Time: 30 Minutes
Total Time: 1- 1/2 Hours
Servings: 80 Meatballs
Ingredients:
Meatballs                                                                                                    SAUCE
3 Lbs. Hamburger ( Prefer 93/7)                                                                   1 tsp. Garlic Powder
1 Cup Crushed Crackers (I prefer Club)                                                      1 tsp. Onion Powder
2 Eggs                                                                                                                           1 tsp. Liquid Smoke
2 tsp. Onion Powder                                                                                    2 Cups of Katsup
1 tsp. Garlic Powder
1/2 tsp. Pepper
2 tsp. Salt
2 tsp. Chili Powder

Instructions-  Mix all the MEATBALL ingredients together and form into balls (I used my Pampered Chef medium scoop) & place them into 2-9x13 glass baking dishes (I made 8 rows of 5 in each pan).  Mix together SAUCE Ingredients and spoon over meatballs.  Bake @ 350* for 1 hour.  These can be put into a crock pot on warm to serve to a group.  TAKE COPIES OF THIS RECIPE TO THE PARTY, THEY'RE A REAL CROWD PLEASER!

PUMPKIN COOKIES
Prep Time: 20 Minutes
Bake Time: 18 Minutes per batch - TOTAL BAKE TIME: about an hour
Servings: 12 Dozen

Ingredients:
4 Cups of Flour                                               1 1/2 Cups of Butter (softened)
2 Cups of Oats (I prefer Quick)                      1 Cup of White Sugar
2 tsp. Cinnamon                                              1 Egg, beaten
1 tsp. Salt                                                        1 tsp. Vanilla
29 Oz. Can of Pumpkin Pack Solid

Instructions-  Mix in LARGE bowl the Flour, Oats, Soda, Cinnamon, & Salt.  In another bowl cream together Butter and Sugar until fluffy.  Add Egg & Vanilla to the wet mixture.  Add Pumpkin.  Mix together the wet and dry ingredients.  Scoop (I used my Pampered Chef Medium Size Cookie Scoop) batter onto baking stone and bake @350* for 18 Minutes.  Cool.  Add Cream Cheese Frosting if you like, they're delicious either way!  WE PREFER TO STORE THESE COLD OVERNIGHT BEFORE EATING.  These are MOIST & DENSE!


CROCK POT CHICKEN
Prep Time: 5 Minutes
Cook Time: 6 Hours
Servings: 6 Large, 9 Average

Ingredients:
6 Frozen Chicken Breasts (Boneless/Skinless)                               YOUR FAVORITE TOOPINGS MAY INCLUDE:
1-24 oz. Jar of your favorite SALSA                                               Soft Tortilla Shells or Tortilla Chips,
                                                                                                         Shredded Cheese, Sour Cream, Lettuce,
                                                                                                         Olives, Peppers, Hot Sauce ... MAKE IT YOUR WAY!
Instructions-  Put 1/2 jar of Salsa into the bottom of the crock pot.  Add all of the Chicken Breasts.  Put the rest of the jar of Salsa over the Chicken.  Cover and heat on HIGH for 6 HOURS.  Shred the Chicken (I leave it in the crock pot and just use two forks) then mix it well with the salsa that's still in the crock pot.  Server on Tortilla Shells or in a bowl over Totilla Chips with whatever toppings you like the most!  THIS IS A GREAT DISH TO TAKE TO A CARRY IN ... AND PEOPLE WON'T BELIEVE HOW EASY IT IS TO MAKE!


HEARTY AND DELISIOUS POTATO CHEESE SOUP
Prep Time: 25 Minutes

Ingredients:
2 Medium Carrots, diced                                                               3 Tbs. Butter
2 Potatoes, diced                                                                           1/4 Cup Flour
1 Cup Boiling Water                                                                      3 1/2 Cups Milk  
1/2 Small Onion                                                                             1/2 Block Velvetta cheese, cubed

Instructions-  Parboil Potatoes and Carrots for 10 minutes in Boiling Water.  In seperate saucepan, Melt butter and add Onions, stir well. Stir flour into 1/2 Cup ofMilk and add to butter mixture.  Whisk in the remaining Milk.  Add Cheese, Potatoes and Carrots (including any remaining water).  Continue stirring until the cheese is melted.  Garnish with onions and bacon if desired.  SERVE with homemade bread.  Smooth texture and Fantastic for a cool Fall, Winter, or Spring afternoon!

PJ KILGORE'S CLAZED PECANS
Prep Time: 5 Minutes

Ingredients:
1 Lb. Pecan Halves                                                                    1 Cup White Sugar
1 Egg White                                                                               1 Tbs. Cinnamon
1 tsp. Salt                                                                                   1 Tbs. Water

Instructions-  Whip Egg White and Water until Frothy.  Mix in the Pecans, stirring until coated well. Put Pecans into a 9x13 baking dish.   Mix remaining ingredients into small bowl and sprinkle over the dry ingredients and then mix until pecans are well coated.  Bake at 300* for 45 minutes, stirring every 10 minutes to ensure they don't burn.  Cool on a paper towel.  ENJOY!  (My family loves thems hot, but be careful if you try them that way, they can burn you.  


KILGORE'S Rt 35 BROWNIE CHEESECAKE

Prep Time: 20 Minutes
Serves: 12

Ingredients:
2 Brownie Mixes (for 9x13) plus ingredients called for on package                 1/2 Cup White Sugar
2 Eggs                                                                                                                   2 Packages Cream Cheese (softened)
1 tsp. Vanilla                                                                                                         1 Cup Milk Chocolate Chips  

Instructions- Mix brownies as instructed on package FOR CHEWY BROWNIES.  Put the brownie mixtue into a greased 9" spring form pan.  Bake at 350* for 23 minutes.  Remove from oven and cool for 10 minutes on a wire rack.  Meanwhile, beat together Sugar, Eggs, Cream Cheese, and Vanilla.  Pour this mixture over the 10 minute cooled brownines.  Melt Chocolate (NO, MORE IS NOT BETTER) and drizzle on top of the Cream Cheese Mixture and swirl into it with a knife.  Bake again for 35 more minutes.  Remove from the oven and cool COMPLETELY.  Run a butter knife around the edge before removing the pan.  Plate in it's entirerty or slice and serve.  DELICIOUS!  


DIANE'S SPICY BLACK EYED PEAS

Prep Time: 20 Minutes
Serves: 12

Ingredients:
4 Cans of Black Eyed Peas                                                                              1 Lb. Bacon, Cooked and Chopped PLUS THE DRIPPINGS
2 Large Onions, diced                                                                                       28 Oz. of Crushed or Diced Tomatoes
4 tsp. Garlic Powder                                                                                         4 tsp. Chili Powder
2 tsp. Salt

Instructions- Add EVERYTHING together ina  5 quart saucepan and bring to a boil. Cover.  Reduce the heat and cook on low about 1 hour.  Wonderfully Flavorful!


DIANE'S CCHOCOLATE MAGIC CREAM CHEESE CAKE
This is my VERY MOST FAVORITE Cake EVER!
Prep Time: 20 Minutes
Servings: 12 Large/36 Small Slices

Ingredients: 1 Chocolate Cake Mix & indgredients called for on package / 8 oz. Softened Cream Cheese / 2 Tbs. Softened Butter / 1 Tbs. Cornstrch / 1 Can Sweetened Condensed Mil / 1 Egg / 1 tsp. Almond Extract

Optional Chocolate Drizzle:  2 Tbs. Butter / 2 Tbs. Cocoa / 2 Tbs. Water / 1/2 tsp. Vanilla / 1Cups Powdered Sugar

Instructions-  Prepare cake mix according to package directions and pour into greased/floured bundt pan.  Next, beat together: Softened Cream Cheese, Softened Butter, Cornstarch, Sweetened Condensed Milk, Egg, & Almond Extract.  Pour Cream Cheese mixture around the top of the cake batter.  Bake@ 350* for  50-55 Minutes.  Cool almost completely, then turn out onto serving dish.  Optional Drizzle;  Melt in saucepan the Butter, then add the Cocoa and Water, cooking until slightly thickened, stirring constantly.  Remove from heat and beat in Vanilla and Powdered Sugar until smooth.  Pour or spoon over the cake.  ENJOY!
